How do you handle excessive barking?

I want to get a Miniature American Eskimo but have been told they are excessive barkers. I am moving into an apartment so I will need to control this barking, I also don't want my dog barking at 12am while I'm trying to sleep. I have heard of the technique where you put some pennies in a can, tape it shut, then when our dog is barking excessively you firmly say quiet, shake the can, apparently dog hate the sound! When the dog stops you praise him! Does this work, any personal experiences with this? If you know of any other techniques to help stop barking please share them with me? Thank you in advance!
